Smoked Bottarga with Goat Cheese Brie
Ingredients
1 triple cream goat cheese wheel, halved long ways 
2 ounces bottarga, thinly sliced
1 tablespoon cracked black pepper 
1 tablespoon fresh chives, chopped 
Olive oil
Directions
- Preheat your oven to 275° F. Slice the goat cheese wheel in half, lengthwise. Add most of the bottarga to the bottom half, setting some aside for a garnish. Drizzle with olive oil, add a few turns of crack black pepper, and replace the top half. Place on a small, greased baking sheet. 
- Warm the goat cheese and bottarga for 10 minutes, making sure not to melt completely. 
- Once warmed, remove from oven and place on a serving dish. Garnish with a drizzle of olive oil, chives, sliced or grated bottarga, and, if desired, lemon zest. 
- Serve with toasted bread and pair with your favorite LOLA wine.
