We are proud producers of the first US-made mullet bottarga. We make the truest expression of Striped Grey Mullet Bottarga, Smoked Mullet Roe, and Blackfin Tuna Mojama. Our pristine waters off the Florida Gulf Coast, near Anna Maria Island and the neighboring fishing village of Cortez, are home to one of this country's last sustaining wild fisheries. Brothers Seth and Mic Cripe, Florida natives, started Cortez Conservas with the mission of not only creating the best possible bottarga in the world, but also developing other sustainably sourced, locally caught, and intentionally preserved seafood products in an effort to add more value to their hometown fishery and community.

  • How to Use Bottarga

    You don’t have to be a professional chef to use bottarga. Grating bottarga like Parmesan is the best way to start experimenting with it. We love it on grilled vegetables like zucchini, a margarita pizza — even fried eggs in the morning.

    Bottarga is an ancient superfood, dating back nearly 3000 years to the Phoenicians. Bottarga is full of zinc, omega-3, protein, calcium, vitamins A and D, and was recently hailed as a true cancer fighter.
